A Great Chicken with Rice Recipe

First of all, let me explain the  “slap your mama” part. Here in the piney woods of Texas, that term is a slang term meaning, mouth watering good. This recipe is out of this world and a single dish meal.

 

Ingredients:

 

4 split chicken breasts ( or 2 whole breasts)

1 stick of butter

1 bunch of green onions

1 green bell pepper

12-14 ounces (med) Pace Picante sauce ( or your favorite salsa )

10-12 ounces shrimp cocktail sauce

1 ½ cups of uncooked rice

2 chicken bullion cubes

 

Using the stick of butter, cook chicken covered in a large skillet until done.  Then allow the chicken to cool enough so that you are able to chop or cube the chicken. Do not empty the skillet of your butter or chicken flavor. After cubing the chicken, add it back to your skillet, and chop your green onions and bell pepper. Add green onions and bell pepper to skillet . Add the picante sauce and cocktail sauce also. Let this simmer slowly, covered, stirring occasionally. In a sauce pan or rice cooker, cook the 1 ½  cups of rice, adding the 2 bullion cubes to your rice water. No need to stir it in when it dissolves. When the rice is done and your skillet has simmered foe 30 minutes, turn of burner and add rice to skillet and stir it in real good. You are ready to eat. This recipe will serve at least 6 people with a good healthy potion. Good eating!!!

JC - You don't have to eat that stuff to know full well how good it is. Instead of the picante sauce and the cocktail sauce, give 2 cans of chopped tomatoes with green chilies a try. (But I know that we'll have to give your recipe a whirl next time.) Thanks.

Gus: Sounds like a good idea. I will have to try it. I wonder if Pace Picante sauce is found outside of Texas. Do you know?

John, this sounds like a killer. I've been known for my chicken breast recipes, though I actually prefer to work with the chicken tenders when I can get 'em.

Pace Picante is a good choice. As you said, it might light you up just a bit, but you won't be reaching for the fire extinguisher.

Usually, when I do the rice thing, I get sliced or whole small button mushrooms and Vidalia onions and saute them seperately with butter/fresh sliced garlic/red table wine.

Then, I introduce that into the rice. Habee has some killer recipes as well so going between you and her? I'm gonna be having some serious fun in the kitchen.

I love your recipe. I just happen to have some chicken breasts at the moment. Hmmm....decisions, decisions!

John, over the years, especially when I was homeless, I had one fry pan out in the woods. So, I would go fishing or snare a rabbit or squirrel and then mix it up with wild vegetables. Special Forces survival training is such that you know what's edible and what isn't. You also know how to live off the land now matter where you end up.

For me, that's sort of how the stirfry thing started with me coupled with techniques I learned in Thailand and other places. When I got to where I was no longer homeless, I went out and bought chicken breasts and upgraded the whole stirfry experience and from there came some serious recipes I use even now.

Cameciob: Thank you for your nice comment. I am on chicken a lot because I had a stroke in 2008, three days after Ike and Im on a low cholesterol diet. I love homemade chicken noodle soup also. Have a nice day and bless you.

Unchained Grace: Sounds like you have a lot of knowledge on making do when the pickings are slim. Thats probably covered in the special forces training. I was in southeast Asia in 69 and 70, but never had to endure those conditions. I am glad that things are better now. When I read your hub, the one I commented on, I felt your words and the annointing in them. I told my brother about you. He is a hubber also,by the hubber name of James Cain207.
